Fuzzy’s Sauerbraten is an early prototype of a new Virginia/Perique blend (Pepper Jelly). Early in development, we had a batch that was accidentally treated with too much casing resulting in a much more tart flavor. We decided that wasn’t the profile we wanted, but we decided to save this ‘sweet & sour’ batch as a one-off weekend special.
